Description

Tosazu is a traditional Japanese seasoning made from rice vinegar, soy sauce, mirin, and a rich dashi broth infused with dried bonito (katsuobushi). Originating from Kochi Prefecture, formerly known as Tosa, it offers a delicate balance of bright acidity, deep umami, and subtle smoky notes characteristic of premium katsuobushi. Free from artificial colours, preservatives, and additives, Tosazu is a versatile condiment prized by professional chefs for its refined flavour and exceptional versatility.

 

Use

Ideal for dressing pickled vegetables, salads, and seaweed dishes, or paired with olive or sesame oil to create flavourful vinaigrettes. It complements beef and salmon tataki, seafood and meat tartares, shellfish, calamari, tempura, and fresh oysters. It is also an excellent base for savoury jellies served with fish and shellfish.
