Fregola Sarda is a traditional toasted pasta from Sardinia, made from premium durum wheat semolina. Produced by rubbing coarse semolina with water into small, irregular pearls, it is slowly dried before being oven-toasted to develop its distinctive golden colour and rich, nutty flavour. Larger than couscous, fregola offers a satisfyingly firm texture, making it ideal for soups, seafood dishes, salads and authentic Sardinian recipes such as fregola con cozze with mussels and tomato sauce.
