Sumac comes from the dried berry of the Rhus Coriaria tree. These red berries are picked by hand in summer time, dried for a month and ground to a fine powder. It is a delicious spice used to enhance dishes, adding a tangy and salty taste. Sumac is slightly acidic and astringent and can replace lemon in many recipes. It works well in salad seasonings, with chicken or beef skewers, yoghurt sauces and marinades.
