This Roasted Malt Extract Powder is made from concentrated barley malt extract and offers a mildly sweet flavour with a distinctive roasted malt aroma. It is ideal for enhancing the colour, flavour and crust development of baked goods, while adding the rich malty notes associated with artisan breads and rolls. As a guide, 1kg of malt extract powder is equivalent to approximately 1.6kg of malt.
Use
Ideal for artisan breads, rye breads, rolls and other baked goods. It improves crumb colour, promotes an even golden-brown crust and rounds out the overall flavour profile. Recommended dosage:
- Bread: 0.5–2% of the flour weight
- Rolls: 0.5–1.5% of the flour weight
For baked goods where the crumb colour is enhanced by malt extract, appropriate product labelling may be required.
