Description

Pectin Nappage X58 is a low methoxyl amidated pectin (LMA) with retarding salts and calcium, designed as a thickening and gelling agent for glossy glazes and creamy preparations. It is especially suitable for calcium-rich and low-sugar applications, offering controlled and slow gelification over approximately 24 hours. Compatible with fatty and dairy liquids, it provides smooth textures and glossy finishes while remaining freezable.

 

Use

Ideal for the preparation of calcium and/or low-sugar glazes, providing a glossy and uniform finish in desserts without requiring high sugar concentrations. Its ability to gel in the presence of calcium makes it particularly suitable for lighter and healthier glaze applications. It is also effective in creams, custards and dairy-based preparations.

Mix with sugar and bring to a boil for complete activation. Suitable pH is above 4. Recommended for formulations with 50–60% added sugar.
