Pectin NH 325 is a low methoxyl amidated pectin (LMA) used as a thickening and gelling agent, particularly in the presence of calcium. It is especially suitable for fruit preparations, allowing the production of stable gels with smooth and pleasant textures. Designed for professional pastry and confectionery applications, it is particularly effective in reduced-sugar formulations and calcium-rich preparations.
Use
A key ingredient for the production of fruit jams, jellies and fruit-based preparations with reduced sugar content or enriched with calcium. This specialised pectin enables the formation of stable gels even under low-sugar conditions while maintaining excellent texture and consistency.
Mix with sugar before incorporation and disperse using strong agitation. Bring the preparation to a boil for complete activation. Recommended for dairy products and calcium-rich fruits. Optimal pH range is 3.2–3.5, with a minimum of 50% added sugar and 20% fruit content.
