Organic Wholemeal Rye Flour is milled from whole rye grain to produce a traditional dark rye flour with a rich, earthy flavour and distinctive character. Widely used for dark rye breads, it is also favoured by artisan bakers for preparing the traditional rye "sponge" used in rye doughs. During this process, the flour is soaked and fermented under carefully controlled conditions, allowing acetic and lactic acids to develop naturally. These contribute to the characteristic flavour, aroma, and excellent keeping qualities of the finished bread.
