Made from 100% organic buckwheat, this naturally gluten-free pseudo-grain flour has a distinctive, nutty flavour and is naturally high in protein, containing all the essential amino acids. Although distantly related to the rhubarb family, buckwheat is not a wheat and is naturally gluten free. Traditionally used in France to make galettes (Breton crêpes), its robust flavour works particularly well in savoury recipes. It can also be added to gluten-free bread recipes, where its protein content helps improve structure and rise, or blended with millet flour for lighter American-style pancakes and waffles.
