Description

'Nduja is a traditional spicy spreadable pork salami from Spilinga, a small town in Calabria, southern Italy. Made from a blend of pork cheek, pork belly, and lard, combined with Calabrian hot red chilli peppers and salt, it is produced without added preservatives or colourings. Stuffed into a natural casing and matured for several months, it develops its characteristic soft texture, intense flavour, and distinctive spicy heat. Rich, savoury, and versatile, 'nduja is one of Calabria's most recognised culinary specialties and is widely used in professional kitchens to add depth and spice to a variety of dishes.

 

Use
