Description

Lardo di Colonnata is a traditional cured pork fat specialty from Colonnata, a small village in Tuscany, Italy. Produced from selected pork back fat, it is matured for a minimum of six months in Carrara marble basins rubbed with garlic and layered with sea salt, herbs, and spices. This unique curing method gives the product its distinctive character and has made it one of Italy's most celebrated cured meat specialties.

Compact and uniform in appearance, Lardo di Colonnata has a pinkish-white colour and a soft, velvety, non-oily consistency. Its aroma is delicate and fragrant, with notes of herbs and spices, while the flavour is elegant, moderately savoury, and finely seasoned with a subtle sweetness.

 

Use

Serve thinly sliced on warm grilled bread, focaccia, or crostini. It can also be used to enrich meat and fish dishes, melt over grilled vegetables, or add depth and flavour to pasta and risotto preparations.
