Description

Proespuma Hot is an emulsifier and stabiliser specifically developed for creating stable hot foams using a siphon. Designed for professional gastronomy applications, it provides excellent whipping, foaming, and emulsifying performance while maintaining the structure and consistency of foams during service.

 

Use

Ideal for hot foams made from broths, sauces, creams, mousses, vegetable preparations, and savoury or sweet culinary applications, Proespuma Hot creates smooth, airy, and stable textures with excellent presentation quality. It is particularly suitable for fine dining and modern gastronomy where hot aerated textures are required.

Dissolve the product into the hot preparation using strong agitation to ensure complete dispersion. Maintain the preparation between 50 °C and 70 °C for optimal performance. Transfer to a siphon and charge according to the siphon manufacturer’s recommendations before service.
