Description

Proespuma Cold is an emulsifier and stabiliser developed for the creation of stable cold foams using a siphon. Designed for professional pastry and gastronomy applications, it provides excellent whipping, foaming, and emulsifying properties while producing light, airy, and stable textures in cold preparations.

 

Use

Ideal for cold foams made from fruit juices, creams, sauces, dairy preparations, cocktails, purées, and contemporary dessert applications, Proespuma Cold allows the creation of smooth and stable textures with excellent presentation quality. Its versatility makes it suitable for both sweet and savoury recipes requiring refined aerated finishes.

Dissolve the product cold using strong agitation to ensure complete and homogeneous incorporation. Use between 50 and 100 g per kilogram of preparation depending on the desired texture and foam stability. Transfer to a siphon and charge according to the siphon manufacturer’s recommendations before service.
