Use
Reverse spherification of fruit juices, cocktails, purées and other low-calcium preparations in modern gastronomy. Enables the creation of stable spheres with liquid interiors while preserving the original flavour profile of the mixture.
Format
Fine white powder. Mix directly into the preparation to be enriched until fully dissolved before processing in an alginate bath. Cold soluble and flavour neutral.
