Description

Gluconolactate is a blend of calcium salts developed for reverse spherification techniques in modern gastronomy. It allows calcium to be added to liquids without altering their original flavour, enabling reactions with sodium alginate to create stable gelled spheres with controlled texture and appearance.

 

Use

Ideal for reverse spherification applications, Gluconolactate is used to enrich liquids that naturally contain insufficient calcium for proper alginate reaction. It is suitable for fruit juices, vegetable preparations, cocktails, dairy-free bases, and creative molecular gastronomy applications where precise texture and clean flavour are essential.

Add directly to the liquid preparation to enrich it with calcium before performing reverse spherification. Once incorporated, the preparation can be dropped into a sodium alginate bath to form gelled spheres with a liquid centre and delicate membrane.
