Description

Silver Gelatine Sheets are pork-derived gelatin sheets with a Bloom strength of 180, designed to provide flexible and stable gel textures in pastry, confectionery and gastronomy applications. Approximately 400 sheets are contained per kilogram, with each sheet weighing 2 g. This gelatin offers reliable gelification, smooth textures and excellent performance in both chilled and frozen preparati

 

Use

Suitable for mousses, creams, bavarois, jellies, desserts and preparations requiring smooth and elastic gel textures.

Hydrate the required quantity of gelatine sheets in cold water for 5–7 minutes, adding the sheets one by one to ensure proper hydration. Once hydrated, drain well to remove excess water.

Add the drained gelatine sheets to the liquid to be gelled and heat the preparation above 40 °C until fully dissolved. For complete gelification, allow the preparation to cool at 4–5 °C for approximately 4 hours. If hydrating directly in the preparation, allow the sheets to hydrate in cold or room-temperature liquid for 5–7 minutes before heating.
