Yemmy Truffle Sauce is a gourmet sauce made with pasteurised egg yolk and tartufata, offering a dense, smooth and creamy texture with a rich egg yolk flavour and a balanced truffle character. Inspired by classic emulsified sauces, it provides consistent texture, stability and flavour for professional kitchen use. Visible flecks of tartufata give the sauce a natural appearance, while its homogeneous texture remains free from lumps, excess liquid and phase separation. Made with 100% natural ingredients and free from thickeners and gelling agents, it is a safe, ready-to-use solution that enhances a wide range of savoury dishes while ensuring reliable, consistent results.

 

Use

Ready to use after defrosting. Defrosts in approximately 10 minutes and can be applied directly from the 250g piping bag without transferring to another container.

Use as a finishing sauce for beef, poultry, fish, vegetables and potatoes, or serve with gourmet burgers, sandwiches and filled rolls. It is also suitable for pasta dishes, risotto, canapés and as a base for customised truffle sauces.
