This speciality white flour is categorised in France by its ash content, from which the name T55 is derived. Milled from a blend of French, Canadian and English wheats, it offers excellent dough extensibility and crumb structure, making it ideal for baguettes and other artisan breads. It also performs well as an all-round bread flour.
