Fregola Sarda is homemade pasta from Sardinia made with 100% durum wheat semolina. Durum wheat semolina is rubbed in a large basin where a mixture of water and saffron is sprayed and then shaped by hand to obtain small balls of semolina which are then roasted in the oven. Fregola Sarda is great in hot or cold dishes such as soups and salads.
