A natural flax fibre texturiser made from brown and golden flax seeds, from which the mucilage is extracted. Composed of cellulose and lignin (insoluble fibres) together with mucilage (soluble fibre), it delivers outstanding thickening, stabilising, emulsifying and suspension properties while remaining neutral in flavour and colour.
Use
Sauces, coulis, mousses, meringues, ice creams, sorbets, emulsions, soups and bakery applications. Thickens both hot and cold preparations across a wide pH range, improves creaminess, stabilises foams and emulsions, enhances aeration and reduces water loss during defrosting. In frozen applications, it helps create smaller ice crystals for smoother texture. Can replace xanthan gum in a 1:2 ratio for stabilising and thickening functions.
