Natural texturiser made from brown and golden flax seeds, obtained by extracting the mucilage naturally present in the fibre. Rich in soluble and insoluble fibres, it provides excellent thickening, stabilising, emulsifying and suspension properties while remaining neutral in flavour and colour. It improves creaminess, enhances aeration and helps create smoother frozen textures by reducing ice crystal formation. Suitable for both sweet and savoury applications and can be used as a xanthan gum replacement for stabilising and thickening functions.
Use
Flaxfiber can be used in savoury preparations such as aqueous sauces and soups, hot and cold creams, emulsified sauces and beverages. It is also suitable for sweet applications including ice creams, sorbets, mousses and meringues.
Disperse directly into the liquid phase and blend until fully incorporated. Suitable for hot and cold preparations across a wide pH range. Use according to the desired texture and stabilisation effect.
