Paste Emulsifier is a highly stable emulsifying preparation made from a blend of Glicemul and Sucro Emul. It features an ivory-white colour, slightly sweet flavour, and neutral aroma, making it suitable for a wide range of preparations without affecting the final flavour profile. Its balanced formulation improves emulsion stability, texture, volume, and shelf life in products containing fats and oils.
Use
Perfect for bread, pastries, biscuits, creams, toppings, fillings, dairy emulsions, confectionery products, and fat-based preparations, Paste Emulsifier improves texture consistency, aeration, and emulsion stability.
Incorporate directly into any liquid preparation containing a fatty phase. Adjust the dosage according to the specific application:
- 30 g/kg: Bread, pastry, and biscuit products
- 20 g/kg: Emulsions of fats and oils, dairy spreads, and liquid emulsions
- 10 g/kg: Decorations, toppings, fillings (excluding fruit fillings), confectionery products, and fermented flavoured dairy preparations
Suitable for both hot and cold applications.
