Description

Elastic is a powdered gelling agent based on a blend of locust bean gum and carrageenan, developed to create elastic, stable, and freeze-resistant gels. Designed for professional pastry and gastronomy applications, it delivers flexible textures with excellent shape retention, even after freezing and thawing.

 

Use

Ideal for elastic gelatines, fluid gels, moulded preparations, dessert inserts, and innovative textural applications, Elastic creates firm yet flexible structures with long-lasting stability. Its freeze-resistant properties make it particularly suitable for frozen desserts and preparations requiring elasticity without brittleness.

Combine the powder with the other dry ingredients and disperse into the liquid preparation. Heat the mixture while stirring to ensure complete hydration and homogeneous incorporation of the gelling agents.
