Description

Premium Hidaka Kombu is a high-quality Japanese kelp harvested from the coastal waters of Hidaka, Hokkaido. Renowned for its tender texture and naturally high glutamate content, it is the ideal kombu for producing authentic dashi with deep umami flavour. Carefully selected by hand, it offers a clean, balanced taste and can also be used in a wide range of traditional Japanese preparations.

 

Use

Perfect for preparing authentic dashi stock, simmered dishes, kombu rolls (kobumaki), and tsukudani. It can also be braised in soy sauce, mirin and sugar to create a rich condiment for fish, seafood, rice and vegetable dishes. Soak in cold water before use to maximise its natural umami.
