Use
Ideal for meringues, whipped cream, sponge cakes, cookies, cupcakes, candies, syrups, and confectionery applications, Cremor Tartaro enhances stability, aeration, and texture while promoting smooth and homogeneous finishes. It is particularly effective for stabilising egg whites during whipping and preventing crystallisation in sugar-based preparations.
Add directly to the preparation while cold and mix thoroughly to ensure even distribution. Use in liquids to prevent crystallisation or in doughs and batters to improve texture and volume. When combined with bicarbonate, it acts as a leavening system for baked preparations.
