Use
Ideal for sugar paste, gum paste, marzipan, bakery applications, stabilised preparations, and edible glues, CMC improves dough elasticity, prevents lump formation, and enhances structural stability. It is particularly useful for decorative pastry work and preparations requiring firmness and flexibility.
Incorporate cold with strong agitation. Always premix with the dry ingredients of the recipe before adding liquids to avoid lump formation. For gum paste applications, knead thoroughly after incorporation, wrap tightly, and allow the dough to rest for 24 hours before use.
