Cacaofruit Juice Concentrate is made from the naturally sweet white pulp surrounding cocoa beans. Once the cacao pod is opened, the beans are revealed encased in a fresh white pulp, which can be pressed to produce a naturally sweet juice. The juice is filtered, gently pasteurised and concentrated to 60° Brix, providing intense fruity sweetness and flavour.
With its golden amber colour and notes of tropical fruit, citrus and honey, it offers a distinctive flavour profile while retaining the natural characteristics of the cacao fruit. Naturally rich in magnesium and potassium, it is free from added sweeteners, additives and preservatives and is suitable for a wide range of food and beverage applications.
Use
Suitable for beverages, cocktails, smoothies, sorbets, ice cream, dairy products, confectionery, bakery applications and desserts. Can be used as a natural sweetening ingredient or reconstituted with water for drinks. Its fruity, exotic flavour pairs well with tropical fruits, chocolate and citrus ingredients.
