Native to the Batak region of northern Sumatra, Indonesia, Batak berry is a rare wild spice from the same botanical family as Sichuan pepper. Its intense citrus aromas, with notes of pink grapefruit, mandarin and fresh herbs, are balanced by a delicate tingling sensation, making it a distinctive ingredient for both savoury and sweet creations.
Use
Lightly crush or grind before use to release its full aroma. Ideal with seafood, grilled or poached fish, shellfish, marinades, veal, poultry and fresh goat's cheese. It also pairs exceptionally well with chocolate desserts, fruit-based recipes and creamy sauces, adding a fresh citrus lift.
