Banyuls vinegar is a French vinegar made with wine from Banyuls which is exposed to the sun for four years and then aged in oak barrels for another 12 months. It keeps a natural sweetness from the grapes and reveals some rich aromas of walnut, gingerbread, honey, vanilla and liquorice. The sweet and tawny flavour lends itself for delicious marinades, deglazing and vinaigrettes.
