Frozen lime juice purée made from carefully selected Persian limes, with a fresh citrus flavour, bright acidity and vibrant green colour. The fruit is prepared to remove the bitter pith and preserve the clean aromatic profile of the lime without added sugar. Suitable for professional pastry, dessert, ice cream and beverage applications.
Use
Suitable for sorbets, gelato, mousses, crémeux, curds, ganache, cocktails, sauces, pâtisserie and plated desserts. The fresh citrus acidity makes it ideal for frozen desserts, pastry fillings, dessert sauces and beverage preparations. Lime pairs particularly well with tropical fruits, berries, coconut, chocolate and fresh herbs such as mint or basil.
Defrost the purée under refrigeration before use and mix well until smooth. Use directly in desserts, ice cream, sauces or beverages. Defrosting is recommended between 0/+4°C for approximately 24 hours. It can also be defrosted in warm water or using a microwave defrost programme.
