Frozen Granny Smith apple purée made from carefully selected apples harvested in France, close to the Capfruit production site in the Rhône valley. Fresh and slightly tart with crisp apple flavour and a light green colour. Produced to preserve the natural fruit character and balanced acidity without added sugar. Suitable for professional pastry, dessert, ice cream and beverage applications.
Use
Suitable for sorbets, gelato, mousses, crémeux, curds, sauces, cocktails, pâtisserie and plated desserts. Its fresh acidity and clean apple flavour make it ideal for frozen desserts, fruit fillings, dessert sauces and beverage preparations. Granny Smith apple pairs particularly well with caramel, vanilla, cinnamon, pear, berries and nuts such as almond or hazelnut.
Defrost the purée under refrigeration before use and mix well until smooth. Use directly in desserts, ice cream, sauces or beverages. Defrosting is recommended between 0/+4°C for approximately 24 hours. It can also be defrosted in warm water or using a microwave defrost programme.
