Description

Procrema 100 Cold is a complete blend of stabilisers, emulsifiers, aerators, and technical sugars developed for cold-process ice cream production. Designed for professional use, it improves texture, creaminess, stability, and scoopability while simplifying the production process without the need for pasteurisation.

 

Use

Ideal for artisanal gelato, soft serve, frozen desserts, and cold-process ice cream bases, Procrema 100 Cold helps achieve a smooth and stable texture with excellent overrun and reduced ice crystal formation. It is particularly suitable for quick production workflows and recipes where pasteurisation is not required.

Mix Procrema 100 Cold directly into the liquid or semi-liquid ice cream base and blend thoroughly using strong agitation to ensure complete dispersion. The recommended dosage is 100 g per litre of base. Once homogenised, proceed directly with freezing or churning.
