Thornhill Duck is an Irish producer based in Blacklion, Co. Cavan, where the Moffitt family have been rearing ducks for over 25 years.
Working with a carefully developed Aylesbury–Pekin cross, the ducks are reared slowly and with close attention to detail, resulting in a product defined by depth of flavour and strong structure. Duck, by nature, is sensitive to conditions and handling, and that focus shows in the final result.
Processed using traditional dry plucking and wax finishing, the skin remains smooth and intact, rendering cleanly to a crisp finish in the pan, while the flesh retains moisture and a deep, rich flavour.
