O-Med is a family-run producer of premium olive oils and vinegars based in Ácula, near Granada in southern Spain. Led by fourth-generation olive growers Paula and Juan de Dios, the company combines traditional cultivation methods with a modern approach focused on quality, sustainability and precision production.
O-Med is particularly known for its early harvest olive oils, made from olives picked by hand during a short harvest window in October to preserve freshness, aroma and intensity. Alongside its oils, the range also includes refined vinegars produced from organic wines using the traditional Schützenbach method, resulting in balanced acidity and complex flavour profiles suited to both savoury and pastry applications.
Sustainability remains a key focus throughout the business, from responsible water management and soil monitoring to converting production waste into fertiliser and renewable energy.
