Caprichos del Paladar is famous for its artichokes, with full control from their own farms in southern Spain through to final preparation. Each one is selected, hand-peeled, and processed within hours of harvest, capturing the product at its natural peak.
At the centre of the range are their confit artichokes, slowly cooked in olive oil to soften the structure while preserving flavour and integrity. Using the Tudela variety, known for its sweetness and low fibre, the result is a tender, clean artichoke with depth and balance.
Ready for the pan, grill, or plancha, they require minimal intervention. A light sear is enough to finish, bringing colour and texture to a product that is already prepared properly. The range extends to other vegetables such as peppers and tomatoes, handled with the same care and precision.
