Description

Natural emulsifier made from citrus fibre (68.2% fibre content), designed to stabilise and improve the texture of both sweet and savoury preparations. It disperses easily in water- and fat-based systems, helping to create stable emulsions while reducing fat-rich ingredients such as egg yolk. It also provides humectant, stabilising and light thickening properties, while improving freeze–thaw stability and reducing syneresis.

 

Use

Egg-free mayonnaises, creams, ganaches, sauces, whipped doughs, fermented doughs, ice creams, beverages.

Mix into one of the two phases (water or fat) of the preparation, then gradually incorporate the second phase while mixing continuously until the desired emulsion is achieved.
