This vinegar comes from the Niagara Falls region (Canada) and is made the ice wine way. The grapes are carefully picked by hand at -8 degrees Celsius and then immediately pressed when frozen, so that the juice has a more concentrated taste. The vinegar is aged according to the solera system in wooden barrels. Less than 5000 bottles come on the market every year.
