The special Pastry Butter 1909 has been developed by chefs for chefs. To be used for making pastries, a pastry butter need to be flexible and a great plasticity for lamination. After many years and tests, Isigny Sainte-Mère got an amazing process called “double texturization” that allows the butter to get the ideal plasticity.
