The particularly healthy grain 'senatore cappelli' is used for the preparation. Copper moulds are used because, like bronze, they provide a rough pasta surface so that sauces adhere well. The pasta is dried naturally and consistently wooden fans at an even temperature for 3 days at 35 degrees Celsius
