Poultry, Foie Gras, Frogs Legs & Game
We source Bronze turkeys from Herb Fed in York and our chicken from Bertram Salter of Carlow Foods, a wholly owned free range artisan poultry producer located in Kilea, near Fenagh, Co. Carlow. Having set new standards for the term free range, the birds are packed with flavour and are exceptionally succulent.
DUCK & GOOSE
Our Irish ducks come from Helena Hickey of Skeaghanore, Ballydehob, West Cork. The ducks full rich flavour and exceptionally tender meat comes from being hand reared on the Atlantic sea air for longer periods and being fed a 100% natural cereal-based diet. We also source beautiful duck and goose meat from our supplier Nivo Finess, based outside Antwerp in Belgium. Available as a natural product, hot smoked or steamed and smoked, each product makes for an outstanding taste experience.
We supply a superior quality of ethically produced, artisan Foie Gras. The duck and goose livers have been sourced exclusively under the strict supervision of the Belgian Foie Gras experts, Nivo Finess. Fresh goose and duck foie gras lobes are selected on the basis of each customer’s preparation requirements – pan-frying, roasting, carpaccio, terrine etc. Nivo Finess also specialise in “homemade” style preparations including torchons and terrines, which can be personalised to each customers preference.
GAME BIRDS, RABBIT & VENISON
Our professional shot game birds and ground game come from private shooting lands on the moors and surrounds of Yorkshire and are expertly handled by our supplier Taste Tradition. For our wild Irish venison, we work with Ballymooney Meats based in Clane, Co. Kildare. They work strictly with professional game hunters and select and prepare for us the finest red, fallow and sika deer while in season. Finnebrogue venison is farmed on a 600 acre estate located near Downpatrick in Co Down. They produce the finest quality home-reared venison specially selected from prime red deer that roam freely in the rolling parkland.
