In the pursuit of Taco perfection Phil travelled to Mexico on a mission to learn how to make the most authentic tortillas in Ireland. Visiting the milpas, molinos and tortillerias, he learnt the ancient Aztec process (nixtamalisation) that gives them their unique flavour. He wasn’t the usual tortilla apprentice and our pasty Irish Founder soon gained a new nickname… ‘Blanco Niño’.
Armed with this knowledge and inspired by the tastes and traditions of Mexico, Phil headed home to open the doors to Ireland’s first (and probably only) Tortilleria in Clonmel. Five years on, they are proud to be making Mexican corn tortillas for chefs and restaurateurs across 13 European countries.
Tortillas are naturally gluten free and have zero added preservatives or artificial enhancers.
Non-GMO corn is used in making the tortillas which is cooked and rested in limewater overnight
