Description
Larderia Poggio is a small artisan business which was founded in 1999 in Colonnata in Italy and produce outstanding Lardo di Colonatta. They select the pork from the slaughterhouse and age the lard for at least 6 months in marble basins. The marble basins are rubbed with garlic and herbs and filled with layers of lard which are covered with a mixture of salt and spice (rosemary, sage, garlic, black pepper, oregano, cinnamon, coriander, nutmeg and star anise).
Lardo di Colonnata has been a popular ingredient in the kitchens for the last few years. It is exquisite when served on grilled bread or as an ingredient in meat or fish dishes.
