Description
Grifola frondosa is a polymore mushroom that grows in clusters at the base of trees, particularly oak treees. The mushroom is commonly known as hen of the woods, ram's head or sheep's head.  It is in season from late summer to early autumn.  They have an intense flavour, with a delicate and feathery texture which is unlike other mushrooms.  This mushroom has a white base that can be removed, frozen and used for a mushroom stock.  This mushroom is pulled ap  best pulled apart by hand and not sliced.  Ideal to add to pasta, rice or egg dishes for extra flavour.
