After selecting the almonds from a specific terroir, Capfruit removes their shell, steam blanches and then presses them. This process allows to guarantee a puree without colouring or preservative but also without artificial flavours. The smoothness of the natural puree obtained makes it possible to use the product in all kinds of applications (pastry preparations, ice creams, candies, ganaches, sauces, stuffings). The puree is unpasteurised and without added sugars other than those naturally present.
