Our Irish farmhouse cheese selection, which includes many international award winners, reflects the tastes and notes unique to Ireland and the milk derived of Irish pastures. We continue to seek out special and unique Irish cheeses to add to our selections which include the award winning Coolattin Cheddar, Knockdrinna and Wicklow Farmhouse Cheese.
In sourcing the finest cheeses of Europe, we work with Antwerp based cheese master, Michel Van Tricht & Son (voted the number one cheese shop in Europe by the Wall Street Journal in 2011). With an obsession for farmhouse, raw-milk cheeses, Michel and his son Frederic go to great lengths to procure cheese direct from the producer. Their range spans Belgium, France, Italy, Spain, Portugal, Switzerland and the UK. Each and every cheese is matured to perfection at their maturing rooms in Antwerp.
We work with Irish and European producers in sourcing traditional and artisan creamy butters and yoghurts such as Glenilen, Cuinneog and Beurre Bordier.
We source our ice cream from Feathered Farm based in Olygate, Co. Wexford where the Cooper brothers combine farming and culinary skills to create a range of silky smooth ice cream in flavours such as French vanilla, salted caramel and rocky road.
