This dark couverture chocolate has a powerful cocoa flavour enriched with subtle floral and fruity-sourish notes. It is made with a mix of Latin American and African beans from the Ariba and Forastero varieties. It pairs well with tonka beans, basil, pecans, passion fruit and raspberry and can be used to make mousse, ganache fillings and moulding.
